Extraction, recovery and purification of natural antioxidants from Andean crops

Abstract

The Andean region of Peru presents one of the largest crop diversity in the world. The nutritive and therapeutic value of some crops, including roots, tubers and fruits, has been recognized for centuries. According to recent scientific studies many of the biological activities could be in relation to the antioxidant activity. A number of Andean plants have been screened for their polyphenolic content. Extraction processes with conventional solvents have been optimized for different crops. The application of enzyme technology was also proposed to aid the extraction and enhance the purity of the bioactive compounds. Further purification and fractionation of the most active fractions by liquid-liquid partition and gel permeation chromatography was addressed.
